A lighter abv offering than other monastic style beers.  The fruit/ spicy yeast character dominates, with some grainy malt sweetness mid palate, then finishing bitter and dry.

Visuals

Pale amber with a slight transparent haze and a rocky, white head.

Aroma

The yeast character jumps out of the glass with banana, pear, rose, clove and apricot.

Flavour

Like the aroma, fruit and spice from the yeast dominates upfront. Think pear and light banana, cinnamon, apricot and spices. There’s a doughy, grainy malt sweetness before the bitterness takes over to reset the palate.

Mouthfeel

Medium bodied, high carbonation with a medium dry finish.
